Thanksgiving Edition: Mashed Potatoes, 3 Ways
26 course food marathon. The food coma to end all food comas. Leftovers for dayz. Or as some people call it: Thanksgiving. This is by far my favorite holiday of the year. I cherish it so much that when my friends suggested we just go to some fancy restaurant and then go clubbing afterwards, I actually replied to the group chat: "If you guys ruin my Thanksgiving, I will defriend you all." And then I left the chat and deleted the conversation because it was just too depressing to hear these people undervalue the most glorious day of the year.
To start off Thanksgiving early this year, I'll present a traditional dish done 3 different ways by various food bloggers and cooks. Kicking off this special series is a tried-and-true favorite: mashed potatoes. Because who doesn't enjoy carbs topped and mixed with dollops of butter?
First, we have a baked potato casserole with sour cream, chives, and cheddar cheese (drooling as I type):

Or, try using your leftover mashed potatoes the next day and making crispy mashed potato cakes with scallions and cheddar
